Lavendar & Honey Bread

Whole wheat flour 325g
Bread flour 150g
Rye flour 25g
Dried lavendar flowers 5g
Instant dried yeast 7g
Alce Nero organic wildflower honey 30g
Salt 10g
Alce Nero extra virgin olive oil 60g
Water 225ml

  1. Place all the ingredients in the dough mixer. Mix 4 minutes on speed 1, and 6 minutes on speed 2. Remove and rest the dough, covered, for 30 minutes, or until doubled in volume.
  2. Shape the dough as desired and prove, covered, until doubled, about 1 hour in a warm place.
  3. Bake at 180°C to 190°C for around 35 minutes, or until bread is golden brown and sounds hollow when tapped.
