Green Mango Kerabu with Honey-Lime Dressing

Unripe mango, julienned 2
Cucumber, cored and juliened 1/2
Shallots, thinly sliced 6
Lemongrass, thinly sliced 2
Kaffir lime leaves, thinly sliced 2
Coriander leaves, roughly chopped 2 stalks
Mint leaves, roughly chopped 2 stalks
Green bird's eye chillies, thinly sliced 3-5
Toasted cashew nutes 2 tbsp
Lime juice 1 tbsp
Fish sauce 1 tbsp
Alce Nero organic honey 2 tbsp
Salt and pepper

  1. Combine the dressing ingredients, adjusting the sweet-sour-salty flavours to taste. Combine with the rest of the ingredients and toss well.
  2. Serve immediately.
